This is a delicious and easy-to-make keto friendly recipe for a Greek Chicken Sheet Pan Meal with Garlic Sauce. It's perfect for those on a low-carb diet and is packed with flavor.
Ingredients[edit | edit source]
- 4 chicken breasts
- 2 bell peppers, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 1/2 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon oregano
- 1 tablespoon garlic powder
- Salt and pepper to taste
For the Garlic Sauce[edit | edit source]
- 1/2 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt to taste
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the chicken, bell peppers, red onion, cherry tomatoes, olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Toss until everything is well coated.
- Spread the mixture out on a large sheet pan and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- While the chicken is cooking, make the garlic sauce. In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, and salt. Stir until well combined.
- Once the chicken is done, serve it with the garlic sauce on the side.
