Jalapeno Popper Frittata is a delicious and nutritious keto friendly dish. It's packed with protein and healthy fats, making it a perfect meal for those following a ketogenic diet.
Ingredients[edit | edit source]
- 6 large eggs
- 1/2 cup cream cheese
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 2 jalapeno peppers, seeded and diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- In a large bowl, whisk together the eggs, cream cheese, heavy cream, and cheddar cheese until well combined. Season with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the onion and jalapeno peppers, and cook until softened, about 5 minutes.
- Add the garlic to the skillet and cook for another minute.
- Pour the egg mixture over the vegetables in the skillet, and stir to combine.
- Transfer the skillet to the preheated oven, and bake for 20-25 minutes, or until the frittata is set and lightly browned on top.
- Allow the frittata to cool for a few minutes before slicing and serving.
