Keto Chicken Alfredo Zoodles
Keto Chicken Alfredo Zoodles is a comforting Italian-inspired dish that replaces traditional pasta with zucchini noodles ("zoodles"). This dish provides the creamy richness of Alfredo sauce without the carb-heavy pasta, making it a favorite among keto enthusiasts.
Ingredients[edit | edit source]
- 2 medium-sized zucchini, spiralized into noodles
- 2 boneless, skinless chicken breasts, sliced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
- 1 tsp red pepper flakes (optional for added heat)
Instructions[edit | edit source]
- In a large skillet, heat olive oil over medium-high heat.
- Add the sliced chicken breasts and season with salt, black pepper, and red pepper flakes if using. Cook until the chicken is browned and fully cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté until fragrant.
- Pour in the heavy cream and bring to a simmer. Once simmering, reduce heat to low and whisk in the grated Parmesan cheese until a creamy sauce forms.
- Return the cooked chicken to the skillet and mix well with the Alfredo sauce.
- Add the spiralized zucchini noodles to the skillet, gently tossing to coat the zoodles in the Alfredo sauce. Cook for an additional 2-3 minutes or just until the zoodles are slightly softened but still have a bite to them.
- Serve the dish hot, garnished with fresh parsley.
Serving Suggestions[edit | edit source]
This dish pairs well with a fresh Keto Caesar Salad or a side of Keto Garlic Bread made from almond or coconut flour.
