Keto Bacon Wrapped Tenderloin with Roasted Garlic Mash[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Wrap the pork tenderloin with the bacon slices, securing with toothpicks if necessary.
  3. Place the wrapped tenderloin on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
  4. While the tenderloin is roasting, cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven alongside the tenderloin for about 30 minutes.
  5. Cut the cauliflower into florets and steam until tender, about 10 minutes.
  6. Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins and mash with a fork.
  7. In a large bowl, combine the steamed cauliflower, mashed garlic, butter, remaining olive oil, and salt and pepper to taste. Mash until smooth.
  8. Serve the bacon wrapped tenderloin sliced, with the roasted garlic mash on the side. Garnish with parsley if desired.
