Keto Chicken Gyro Salad with Lemon Garlic Dressing[edit | edit source]
Ingredients[edit | edit source]
- Chicken Breasts - 2
- Romaine Lettuce - 2 cups, chopped
- Cucumber - 1, diced
- Tomato - 1, diced
- Red Onion - 1/2, thinly sliced
- Feta Cheese - 1/2 cup, crumbled
- Olive Oil - 2 tablespoons
- Lemon Juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried Oregano - 1 teaspoon
- Salt and Pepper - to taste
Instructions[edit | edit source]
- Season the chicken breasts with salt, pepper, and dried oregano.
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes on each side. Remove from heat and let rest.
- While the chicken is resting, prepare the salad. In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomato, thinly sliced red onion, and crumbled feta cheese.
- To make the dressing, combine the remaining olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl. Whisk until well combined.
- Slice the rested chicken and add it to the salad. Drizzle the dressing over the salad and toss to combine.
- Serve the Keto Chicken Gyro Salad with Lemon Garlic Dressing immediately.
