Keto Chicken Gyro Salad with Lemon Garlic Dressing[edit | edit source]

  1. Season the chicken breasts with salt, pepper, and dried oregano.
  2. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes on each side. Remove from heat and let rest.
  3. While the chicken is resting, prepare the salad. In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomato, thinly sliced red onion, and crumbled feta cheese.
  4. To make the dressing, combine the remaining olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl. Whisk until well combined.
  5. Slice the rested chicken and add it to the salad. Drizzle the dressing over the salad and toss to combine.
  6. Serve the Keto Chicken Gyro Salad with Lemon Garlic Dressing immediately.
