Keto Chicken Pad Thai is a delicious, low-carb alternative to traditional pad thai. This recipe is packed with flavors and is perfect for those following a keto diet.
Ingredients[edit | edit source]
- 2 chicken breasts, thinly sliced
- 2 tablespoons coconut oil
- 2 eggs, beaten
- 1 cup bean sprouts
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup unsalted peanuts, crushed
- 1 lime, cut into wedges
- Salt and pepper to taste
For the Sauce[edit | edit source]
- 3 tablespoons fish sauce
- 1 tablespoon soy sauce
- 2 tablespoons erythritol
- 1 tablespoon lime juice
- 1/2 teaspoon red pepper flakes
Instructions[edit | edit source]
- Heat the coconut oil in a large pan over medium heat.
- Add the chicken and season with salt and pepper. Cook until the chicken is no longer pink.
- Push the chicken to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- In a small bowl, mix together the ingredients for the sauce.
- Pour the sauce over the chicken and eggs. Stir to combine.
- Add the bean sprouts, green onions, and cilantro. Stir until well combined.
- Serve the pad thai topped with crushed peanuts and a wedge of lime.
