Keto Chicken Pesto Zoodle Salad[edit | edit source]
Ingredients[edit | edit source]
- 2 Chicken Breasts
- 1 cup Basil Pesto
- 4 medium Zucchini
- 1 cup Cherry Tomatoes
- 1/2 cup Parmesan Cheese
- Salt and Pepper to taste
Instructions[edit | edit source]
- Season the Chicken Breasts with Salt and Pepper and grill until fully cooked. Allow to cool and then slice into strips.
- While the chicken is cooking, spiralize the Zucchini to create zoodles.
- In a large bowl, combine the zoodles, sliced chicken, Basil Pesto, and halved Cherry Tomatoes. Toss until everything is well coated in the pesto.
- Top with grated Parmesan Cheese before serving.
