Keto Chicken Provencale is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is packed with flavors from the Mediterranean region and is sure to satisfy your taste buds.
Ingredients[edit | edit source]
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes
- 1/2 cup black olives, pitted and sliced
- 1/2 cup green olives, pitted and sliced
- 1 tablespoon herbes de Provence
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook until browned on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, garlic, and bell peppers. Cook until the vegetables are softened.
- Add the diced tomatoes, black olives, green olives, and herbes de Provence to the skillet. Stir to combine.
- Return the chicken to the skillet, nestling it into the vegetable mixture. Season with salt and pepper.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
