  3. In the same skillet, add the onion, garlic, and bell peppers. Cook until the vegetables are softened.
  4. Add the diced tomatoes, black olives, green olives, and herbes de Provence to the skillet. Stir to combine.
  5. Return the chicken to the skillet, nestling it into the vegetable mixture. Season with salt and pepper.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
