Keto Chocolate Covered Macaroons[edit | edit source]
Keto Chocolate Covered Macaroons are a delicious, low-carb dessert that are perfect for those following a Ketogenic diet. They are easy to make and are packed with healthy fats and protein.
Ingredients[edit | edit source]
- 2 cups of Unsweetened shredded coconut
- 3 Egg whites
- 1/4 cup of Erythritol
- 1/2 teaspoon of Vanilla extract
- 1/4 teaspoon of Salt
- 100 grams of Dark chocolate (at least 70% cocoa)
Instructions[edit | edit source]
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded coconut, egg whites, erythritol, vanilla extract, and salt. Mix until well combined.
- Using a cookie scoop or your hands, form the mixture into small balls and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the macaroons are golden brown.
- While the macaroons are cooling, melt the dark chocolate in a microwave or over a double boiler.
- Once the macaroons are cool, dip the bottom of each one in the melted chocolate and place back on the baking sheet.
- Allow the chocolate to harden before serving.
