Keto Coconut Lime Cupcakes[edit | edit source]
Keto Coconut Lime Cupcakes are a delicious, low-carb dessert option that are perfect for those following a Ketogenic diet. They are moist, flavorful, and easy to make.
Ingredients[edit | edit source]
- 1 cup of Coconut flour
- 1/2 cup of Erythritol
- 1 teaspoon of Baking powder
- 1/2 teaspoon of Salt
- 1/2 cup of Coconut oil, melted
- 4 large Eggs
- 1/2 cup of Coconut milk
- 1 tablespoon of Lime zest
- 2 tablespoons of Lime juice
For the frosting:
- 1/2 cup of Butter, softened
- 1/4 cup of Erythritol
- 1 tablespoon of Lime juice
- 1 teaspoon of Lime zest
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine the coconut flour, erythritol, baking powder, and salt.
- In a separate bowl, whisk together the melted coconut oil, eggs, coconut milk, lime zest, and lime juice.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Divide the batter evenly among the cupcake liners and bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- While the cupcakes are cooling, make the frosting by beating together the butter, erythritol, lime juice, and lime zest until smooth.
- Once the cupcakes are completely cooled, frost them with the lime frosting.
