  1. In a small saucepan, heat the coconut milk over medium heat until it begins to simmer.

  3. Reduce the heat to low and let the mixture simmer for about 10 minutes, stirring occasionally, until it thickens to a porridge-like consistency.
  4. Remove from heat and stir in the vanilla extract and sweetener, if using.
  5. Serve warm, topped with berries and nuts if desired.
