Keto Coconut Porridge is a delicious and nutritious breakfast option for those following a Ketogenic diet. It's rich in healthy fats and fiber, making it a great way to start your day.
Ingredients[edit | edit source]
- 1 cup of Coconut Milk
- 2 tablespoons of Chia Seeds
- 2 tablespoons of Unsweetened Shredded Coconut
- 1 tablespoon of Coconut Oil
- 1/2 teaspoon of Vanilla Extract
- Sweetener of choice to taste (optional)
- Berries and Nuts for topping (optional)
Instructions[edit | edit source]
- In a small saucepan, heat the coconut milk over medium heat until it begins to simmer.
- Add the chia seeds, shredded coconut, and coconut oil to the saucepan. Stir well to combine.
- Reduce the heat to low and let the mixture simmer for about 10 minutes, stirring occasionally, until it thickens to a porridge-like consistency.
- Remove from heat and stir in the vanilla extract and sweetener, if using.
- Serve warm, topped with berries and nuts if desired.
