Keto Eggs Benedict with Mug Bread[edit | edit source]

For the Mug Bread[edit | edit source]
- 1/3 cup almond flour
- 1/2 teaspoon baking powder
- 1 large egg
- 1 tablespoon butter, melted
For the Hollandaise Sauce[edit | edit source]
- 2 egg yolks
- 1/2 cup butter, melted
- 1 tablespoon lemon juice
- Salt to taste
Instructions[edit | edit source]
- Start by making the mug bread. In a microwave-safe mug, mix together the almond flour, baking powder, egg, and melted butter. Microwave for 90 seconds or until firm. Let cool, then slice into two pieces.
- To poach the eggs, bring a pot of water to a simmer. Add a tablespoon of vinegar. Crack each egg into a small bowl, then gently slide it into the water. Cook for 4 minutes, then remove with a slotted spoon.
- To make the hollandaise sauce, whisk together the egg yolks, melted butter, lemon juice, and salt in a heatproof bowl set over a pot of simmering water. Continue to whisk until the sauce thickens.
- To assemble the eggs benedict, place a slice of ham on each piece of mug bread. Top with a poached egg, then drizzle with hollandaise sauce. Serve with slices of avocado on the side.
