Keto Fajita Chicken Casserole is a delicious and healthy dish that is perfect for those following a keto diet. It is packed with flavors from the fajita seasoning and is loaded with chicken, bell peppers, onions, and cheese.
Ingredients[edit | edit source]
- 3 chicken breasts, boneless and skinless
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups Mexican blend cheese, shredded
- 1 packet fajita seasoning
- 1/2 cup heavy cream
- 2 tablespoons olive oil
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until no longer pink in the center, about 6-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the bell peppers and onion. Cook until they are softened, about 5 minutes.
- Cut the cooked chicken into bite-sized pieces and return it to the skillet. Sprinkle the fajita seasoning over the chicken and vegetables, stirring to coat evenly.
- Pour the heavy cream over the chicken and vegetables, then sprinkle the shredded cheese on top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
