Keto Holiday Turkey Meatballs with Roasted Brussels Sprouts and Mustard Mayo[edit | edit source]

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground turkey, almond flour, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
  5. While the meatballs are baking, prepare the Brussels sprouts. Toss them in olive oil, salt, and pepper, and spread them out on a separate baking sheet.
  6. Roast the Brussels sprouts in the oven for 15-20 minutes, or until they are tender and caramelized.
  7. To make the mustard mayo, combine the mayonnaise, Dijon mustard, and lemon juice in a small bowl. Stir until well combined.
  8. Serve the turkey meatballs with the roasted Brussels sprouts and a side of mustard mayo.
