  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the chicken pieces to the pan and cook until they are browned and cooked through.
  3. Remove the chicken from the pan and set it aside.
  4. In the same pan, add the garlic, ginger, and chili flakes. Cook for a minute until fragrant.
  5. Add the bell pepper and spring onions to the pan and cook until they are tender.
  6. Return the chicken to the pan and add the soy sauce, vinegar, and roasted peanuts.
  7. Stir everything together and cook for a few more minutes until everything is well combined and heated through.
  8. Season with salt and pepper to taste.
  9. Serve the Keto Kung Pao Chicken hot.
