Keto Lemon Bars with Shortbread Crust is a delicious, low-carb dessert that is perfect for those following a keto diet. The tangy lemon filling pairs perfectly with the buttery shortbread crust, making this a dessert that is sure to impress.

For the Shortbread Crust[edit | edit source]
- 1 1/2 cups Almond Flour
- 1/4 cup Erythritol
- 1/2 cup Butter, melted
- 1 tsp Vanilla Extract
For the Lemon Filling[edit | edit source]
- 1 cup Lemon Juice
- 1/2 cup Erythritol
- 5 large Eggs
- 1/4 cup Almond Flour
- Zest of 2 Lemons
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the almond flour, erythritol, melted butter, and vanilla extract. Press this mixture into the bottom of a lined 8x8 baking dish.
- Bake the crust for 10-15 minutes, or until lightly golden.
- While the crust is baking, prepare the lemon filling. In a separate bowl, whisk together the lemon juice, erythritol, eggs, almond flour, and lemon zest.
- Once the crust is done baking, pour the lemon filling over the hot crust.
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set.
- Allow the bars to cool completely before cutting into squares.
