  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the almond flour, erythritol, melted butter, and vanilla extract. Press this mixture into the bottom of a lined 8x8 baking dish.
  3. Bake the crust for 10-15 minutes, or until lightly golden.
  4. While the crust is baking, prepare the lemon filling. In a separate bowl, whisk together the lemon juice, erythritol, eggs, almond flour, and lemon zest.
  5. Once the crust is done baking, pour the lemon filling over the hot crust.
  6. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set.
  7. Allow the bars to cool completely before cutting into squares.
