This is a delicious and refreshing Keto friendly dessert that is perfect for hot summer days. The recipe is simple and easy to follow, and the result is a creamy and tangy lemon ice cream that you will love.

  1. In a medium saucepan, combine the heavy cream, almond milk, and erythritol. Heat over medium heat until the erythritol is fully dissolved.
  2. Remove the saucepan from the heat and add the lemon juice, lemon zest, and vanilla extract. Stir well to combine.
  3. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours, or until thoroughly chilled.
  4. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  5. Transfer the ice cream to a lidded container and freeze for at least 4 hours, or until firm.
