Keto lemon ice cream
This is a delicious and refreshing Keto friendly dessert that is perfect for hot summer days. The recipe is simple and easy to follow, and the result is a creamy and tangy lemon ice cream that you will love.
Ingredients[edit]
- 2 cups of heavy cream
- 1 cup of almond milk
- 3/4 cup of erythritol
- Juice and zest of 2 lemons
- 1 teaspoon of vanilla extract
Instructions[edit]
- In a medium saucepan, combine the heavy cream, almond milk, and erythritol. Heat over medium heat until the erythritol is fully dissolved.
- Remove the saucepan from the heat and add the lemon juice, lemon zest, and vanilla extract. Stir well to combine.
- Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours, or until thoroughly chilled.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Transfer the ice cream to a lidded container and freeze for at least 4 hours, or until firm.
- Serve the Keto Lemon Ice Cream in bowls or cones, and enjoy!
