Keto Mini Vanilla Cloud Cakes are a delicious, low-carb dessert option that are perfect for those following a Ketogenic diet. They are light, fluffy, and packed with vanilla flavor.
Ingredients[edit | edit source]
- 1/2 cup of Almond Flour
- 1/4 cup of Coconut Flour
- 1/2 teaspoon of Baking Powder
- 1/4 teaspoon of Salt
- 4 large Eggs
- 1/2 cup of Erythritol
- 1 teaspoon of Vanilla Extract
- 1/4 cup of Unsalted Butter, melted
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, combine the almond flour, coconut flour, baking powder, and salt.
- In a separate bowl, whisk together the eggs, erythritol, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet, stirring until just combined.
- Slowly pour in the melted butter, stirring continuously.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a cake comes out clean.
- Allow the cakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
