  1. Heat the olive oil in a non-stick pan over medium heat.
  2. Add the onions, bell peppers, and mushrooms to the pan and sauté until they are soft.
  3. In a bowl, beat the eggs and add a pinch of salt and pepper.
  4. Pour the beaten eggs over the sautéed vegetables in the pan.
  5. When the omelet starts to cook and get firm, but still has a little raw egg on top, sprinkle the mozzarella cheese over the omelet.
  6. Spread the tomato sauce over the cheese, and then add the sliced pepperoni.
  7. Cover the pan and cook until the cheese is melted and the omelet is fully cooked.
  8. Slide the omelet out of the pan onto a plate, cut into slices, and serve.
