Keto quesadillas

Keto Quesadillas are a delicious and easy-to-make dish that is perfect for those following a keto diet. This recipe is packed with healthy fats and proteins, making it a great choice for a low-carb meal.
Ingredients[edit | edit source]
- 2 low-carb tortillas
- 1 cup of shredded cheddar cheese
- 1/2 cup of cooked chicken
- 1/4 cup of bell peppers, diced
- 1/4 cup of onions, diced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat one tablespoon of olive oil in a pan over medium heat.
- Add the onions and bell peppers to the pan and sauté until they are soft and slightly caramelized.
- Add the cooked chicken to the pan and season with salt and pepper. Cook for another 2-3 minutes until the chicken is heated through.
- Remove the chicken and vegetables from the pan and set aside.
- In the same pan, add another tablespoon of olive oil and place one tortilla in the pan.
- Sprinkle half of the cheese on the tortilla, followed by the chicken and vegetable mixture, and then the rest of the cheese.
- Place the second tortilla on top and press down gently with a spatula.
- Cook for 2-3 minutes on each side until the tortillas are golden brown and the cheese is melted.
- Cut into quarters and serve hot.
