Keto Corned Beef and Cabbage is a traditional Saint Patrick's Day dish that has been modified to fit a Ketogenic diet. This recipe is low in carbs and high in protein, making it a perfect meal for those following a keto diet.

  1. Rinse the corned beef brisket under cold water and pat dry with paper towels.
  2. Place the brisket in a large slow cooker and sprinkle with the black peppercorns and minced garlic.
  3. Add the onion and carrots around the brisket.
  4. Pour the water and beef broth over the brisket and vegetables.
  5. Cook on low for 8 hours.
  6. Add the cabbage wedges to the slow cooker and cook for an additional hour.
  7. Remove the brisket from the slow cooker and let it rest for 10 minutes before slicing.
  8. Serve the corned beef with the vegetables and a little bit of the cooking liquid.
