Keto salad nicoise
Keto Salad Nicoise[edit | edit source]
A delicious and healthy Keto twist on a classic French dish, the Keto Salad Nicoise is a perfect meal for those following a low-carb diet.
Ingredients[edit | edit source]
- 2 tuna steaks or 1 can of tuna in water
- 4 eggs
- 1 cup of green beans
- 1/2 cup of black olives
- 2 tomatoes
- 1 red bell pepper
- 1/2 red onion
- 1/2 cup of extra virgin olive oil
- 2 tablespoons of apple cider vinegar
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by boiling the eggs in a pot of water for about 10 minutes. Once done, peel them and set them aside.
- While the eggs are boiling, blanch the green beans in another pot of boiling water for about 2 minutes. Then, drain and rinse them under cold water to stop the cooking process.
- Slice the tomatoes, red bell pepper, and red onion. Set them aside.
- If using fresh tuna, season it with salt and pepper and sear it in a hot pan with a bit of olive oil for about 2 minutes on each side. If using canned tuna, simply drain it.
- To make the dressing, combine the olive oil, apple cider vinegar, salt, and pepper in a small bowl and whisk until well combined.
- To assemble the salad, arrange the green beans, tomatoes, red bell pepper, red onion, black olives, and tuna on a large plate. Slice the boiled eggs and place them on top. Drizzle the dressing over the salad before serving.
