  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Season the salmon fillets with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium heat.
  4. Add the salmon fillets to the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy.
  5. Flip the salmon and cook for another 2-3 minutes.
  6. Remove the salmon from the skillet and set aside.
  7. In the same skillet, add the minced garlic and cook until fragrant.
  8. Add the spinach to the skillet and cook until wilted.
  9. Add the lemon juice and butter to the skillet and stir until the butter is melted.
  10. Return the salmon to the skillet and place the skillet in the preheated oven.
  11. Bake for 10-12 minutes until the salmon is cooked through.
  12. Serve the salmon on a bed of the spinach.
