Keto sansrival is a keto friendly, low carbohydrate, food item.

Keto Sansrival is a decadent Filipino dessert traditionally made with layers of cashew meringue and rich buttercream. The keto adaptation substitutes the regular sugar with erythritol and uses almond flour for the meringue to keep it low-carb.
Keto Sansrival Recipe[edit | edit source]
Ingredients[edit | edit source]
- 2 cups almond flour
- 6 large egg whites
- 1 cup erythritol
- 1 teaspoon cream of tartar
- 1 cup unsalted butter, softened
- 1/2 cup cashew nuts, finely chopped
- 1 teaspoon vanilla extract
Preparation[edit | edit source]
- Preheat oven to 325°F (163°C). Line baking sheets with parchment paper.
- In a large bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add erythritol, beating until stiff peaks form.
- Gently fold in almond flour until combined. Spread the mixture evenly onto the prepared baking sheets.
- Bake for about 20-25 minutes or until golden brown. Allow to cool.
- To prepare the buttercream, beat the softened butter with erythritol and vanilla extract until smooth and creamy.
- Layer the meringue sheets with buttercream, sprinkling each layer with chopped cashew nuts.
- Frost the top and sides of the cake with the remaining buttercream and decorate with more cashews.
- Refrigerate for at least 4 hours before serving.
Serving Suggestions[edit | edit source]
- Slice the Keto Sansrival with a serrated knife to get clean cuts through the layers.
- Pairs well with a cup of unsweetened coffee or tea.
