  1. Start by preparing the turkey schnitzel. Beat the eggs in a bowl and set aside. In another bowl, mix the almond flour and grated parmesan cheese. Season the turkey cutlets with salt and pepper, then dip each cutlet in the egg, followed by the almond flour mixture.
  2. Heat the olive oil in a pan over medium heat. Add the coated turkey cutlets and cook for about 4-5 minutes on each side, until golden brown and cooked through.
  3. While the schnitzel is cooking, prepare the green bean fries. Preheat your oven to 200°C (400°F). Beat the egg in a bowl and set aside. In another bowl, mix the almond flour with some salt and pepper. Dip each green bean in the egg, followed by the almond flour mixture. Place the coated green beans on a baking sheet and bake for about 15-20 minutes, until crispy.
  4. To prepare the Dijon mayo, simply mix the mayonnaise, Dijon mustard, and lemon juice in a bowl.
  5. Serve the turkey schnitzel with the green bean fries and Dijon mayo on the side.
