Keto Waffles with Blueberry Butter[edit | edit source]

  1. Preheat your Waffle Iron.
  2. In a large bowl, combine the almond flour, eggs, unsweetened almond milk, erythritol, baking powder, vanilla extract, and a pinch of salt. Mix until the batter is smooth.
  3. Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions.
  4. While the waffles are cooking, make the blueberry butter. In a small saucepan, combine the blueberries and butter. Cook over medium heat until the blueberries have burst and the butter is melted and infused with the blueberry flavor.
  5. Serve the waffles warm, topped with the blueberry butter.
