This is a delicious and keto-friendly recipe for Lemon Raspberry Sweet Rolls. They are perfect for a sweet treat or a decadent breakfast.
Ingredients[edit | edit source]
- Almond flour - 2 cups
- Erythritol - 1/2 cup
- Baking powder - 2 tsp
- Salt - 1/4 tsp
- Eggs - 2 large
- Unsalted butter - 1/4 cup, melted
- Vanilla extract - 1 tsp
- Lemon zest - 1 tbsp
- Raspberries - 1 cup
- Cream cheese - 1/2 cup
- Lemon juice - 2 tbsp
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, melted butter, vanilla extract, and lemon zest.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
- Spread the dough out on the prepared baking sheet, forming a rectangle.
- Spread the raspberries and cream cheese over the dough, leaving a small border around the edges.
- Roll the dough up tightly, starting from one of the long sides.
- Slice the roll into 8 equal pieces and place them on the baking sheet.
- Bake for 20-25 minutes, or until the rolls are golden brown.
- Drizzle the rolls with a mixture of lemon juice and erythritol, if desired.
