Lemon Rosemary Roasted Chicken Thighs is a delicious, keto-friendly recipe that is easy to prepare and packed with flavor. This dish is perfect for those following a keto diet as it is low in carbs and high in protein and healthy fats.
Ingredients[edit | edit source]
- 8 chicken thighs, bone-in and skin-on
- 2 lemons, juiced and zested
- 4 sprigs of fresh rosemary
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper.
- Add the chicken thighs to the bowl and toss to coat them in the marinade. Let them marinate for at least 30 minutes.
- Arrange the chicken thighs on a baking sheet and top each one with a sprig of rosemary.
- Roast the chicken in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy.
- Let the chicken rest for a few minutes before serving.
