Low Carb Asparagus Salad with Walnuts[edit | edit source]

Instructions[edit | edit source]

  1. Start by washing the Asparagus thoroughly and cutting off the tough ends.
  2. Bring a pot of water to a boil and blanch the asparagus for 2-3 minutes until they are bright green and slightly tender. Drain and rinse under cold water to stop the cooking process.
  3. In a dry pan, toast the Walnuts over medium heat until they are slightly browned and fragrant. Be careful not to burn them.
  4. In a large bowl, combine the asparagus, toasted walnuts, juice of one Lemon, Olive Oil, Salt and Pepper. Toss until everything is well coated.
  5. Sprinkle the Parmesan Cheese over the top of the salad and serve.
