Low carb asparagus salad with walnuts
Low Carb Asparagus Salad with Walnuts[edit | edit source]
Ingredients[edit | edit source]
- 1 bunch of Asparagus
- 1 cup of Walnuts
- 1 Lemon
- 2 tablespoons of Olive Oil
- Salt and Pepper to taste
- 1/2 cup of Parmesan Cheese
Instructions[edit | edit source]
- Start by washing the Asparagus thoroughly and cutting off the tough ends.
- Bring a pot of water to a boil and blanch the asparagus for 2-3 minutes until they are bright green and slightly tender. Drain and rinse under cold water to stop the cooking process.
- In a dry pan, toast the Walnuts over medium heat until they are slightly browned and fragrant. Be careful not to burn them.
- In a large bowl, combine the asparagus, toasted walnuts, juice of one Lemon, Olive Oil, Salt and Pepper. Toss until everything is well coated.
- Sprinkle the Parmesan Cheese over the top of the salad and serve.
