This is a delicious and healthy keto friendly recipe for Low Carb Bouillabaisse with Saffron Aioli. It's a perfect dish for those who are on a ketogenic diet and love seafood.
Ingredients[edit | edit source]
- 1 lb fish fillets, cut into chunks
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb mussels, cleaned
- 1/2 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) tomatoes, diced
- 1 cup fish stock
- 1/2 cup white wine
- 1 tsp saffron threads
- Salt and pepper to taste
For the Saffron Aioli[edit | edit source]
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 1 tsp saffron threads, soaked in 1 tbsp hot water
- Salt to taste
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft.
- Add the tomatoes, fish stock, white wine, saffron, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the fish, shrimp, and mussels to the pot. Cover and cook for 10 minutes, or until the seafood is cooked through.
- While the soup is cooking, make the saffron aioli. In a small bowl, combine the mayonnaise, garlic, saffron and its soaking water, and salt. Stir until well combined.
- Serve the bouillabaisse hot, topped with a dollop of saffron aioli.
