Low Carb Cauliflower Mash is a delicious and healthy alternative to traditional mashed potatoes. It's a perfect side dish for those following a keto diet or anyone looking to reduce their carbohydrate intake.
Ingredients[edit | edit source]
- 1 large cauliflower head, cut into florets
- 2 cloves of garlic, minced
- 2 tablespoons of butter
- 1/4 cup of heavy cream
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Instructions[edit | edit source]
- Start by steaming the cauliflower. Place the cauliflower florets in a steamer basket over a pot of boiling water. Cover and steam until the cauliflower is tender, about 10-15 minutes.
- While the cauliflower is steaming, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté until fragrant.
- Once the cauliflower is tender, transfer it to a food processor. Add the sautéed garlic and butter, heavy cream, salt, and pepper.
- Blend until smooth and creamy. If the mixture is too thick, add more heavy cream as needed.
- Taste and adjust the seasoning as needed. Transfer the mash to a serving bowl and garnish with fresh chives.
