This is a delicious and healthy keto friendly recipe for Low Carb Chicken and Zucchini Curry Soup. It's a perfect meal for those on a low-carb diet or anyone who loves a good, hearty soup.
Ingredients[edit | edit source]
- 2 tablespoons of coconut oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of curry powder
- 1 teaspoon of turmeric
- 1/2 teaspoon of cayenne pepper
- 1 pound of chicken breast, cut into bite-sized pieces
- 2 medium zucchini, chopped
- 4 cups of chicken broth
- 1 can of coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions[edit | edit source]
- Heat the coconut oil in a large pot over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the curry powder, turmeric, and cayenne pepper to the pot and stir to combine.
- Add the chicken to the pot and cook until it is no longer pink.
- Add the zucchini to the pot and stir to combine.
- Pour the chicken broth and coconut milk into the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with fresh cilantro.
