Low carb christmas yule log
This is a delicious and festive keto friendly recipe for a Low Carb Christmas Yule Log. It's perfect for those who are following a low-carb diet or anyone who just wants a healthier option during the holiday season.
Ingredients[edit]
- 6 eggs
- 1/2 cup erythritol
- 1/4 cup cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup heavy cream
- 1/2 cup sugar-free chocolate chips
Instructions[edit]
- Preheat your oven to 375 degrees F (190 degrees C). Line a 10x15 inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs until they are frothy. Gradually add the erythritol, beating until thick and lemon-colored.
- Beat in the cocoa, vanilla, and salt. Spread the batter evenly into the prepared pan.
- Bake for 15 minutes, or until the cake springs back when lightly touched. Cool for 5 minutes.
- Invert the cake onto a kitchen towel dusted with cocoa. Roll up the cake in the towel, starting with a short end. Cool completely.
- In a small saucepan, heat the heavy cream and sugar-free chocolate chips until the chips are melted and the mixture is smooth.
- Unroll the cake and spread the filling over the cake. Roll up again and place seam side down on a serving platter. Chill until serving.
