Low Carb Eggplant Gratin[edit | edit source]
A delicious and healthy keto friendly dish, the Low Carb Eggplant Gratin is a perfect meal for those on a low carb diet.
Ingredients[edit | edit source]
- 2 large eggplants
- 2 cups of heavy cream
- 1 cup of Parmesan cheese, grated
- 1 cup of Mozzarella cheese, grated
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1 tablespoon of olive oil
- Fresh basil leaves for garnish
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- Slice the eggplants into 1/2 inch thick rounds.
- Heat the olive oil in a large skillet over medium heat. Add the eggplant slices and cook until they are golden brown on both sides. Remove from heat.
- In a separate bowl, mix together the heavy cream, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper.
- In a baking dish, arrange a layer of eggplant slices. Pour half of the cream mixture over the eggplants.
- Repeat with another layer of eggplant and cream mixture.
- Bake in the preheated oven for about 30 minutes, or until the top is golden and bubbly.
- Garnish with fresh basil leaves before serving.
