Low Carb Eggplant Towers is a delicious and nutritious keto friendly recipe. It is a perfect dish for those who are on a ketogenic diet and love to enjoy a variety of flavors.

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Slice the eggplants into 1/2 inch thick rounds.
  3. Arrange the eggplant slices on a baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.
  4. Bake the eggplant slices for 15 minutes, then flip and bake for another 15 minutes.
  5. Once the eggplant slices are done, start building your towers. Place a slice of eggplant on a baking sheet, then add a spoonful of marinara sauce, a sprinkle of both cheeses, and a sprinkle of basil. Repeat this process until you have built your tower.
  6. Bake the eggplant towers for 10-15 minutes, or until the cheese is melted and bubbly.
  7. Serve the Low Carb Eggplant Towers hot and enjoy!
