Low Carb Eggplant Towers is a delicious and nutritious keto friendly recipe. It is a perfect dish for those who are on a ketogenic diet and love to enjoy a variety of flavors.
Ingredients[edit | edit source]
- 2 large eggplants
- 1 cup of mozzarella cheese, shredded
- 1/2 cup of Parmesan cheese, grated
- 1 cup of marinara sauce
- 1/2 cup of fresh basil, chopped
- Salt and pepper to taste
- Olive oil for brushing
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- Slice the eggplants into 1/2 inch thick rounds.
- Arrange the eggplant slices on a baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.
- Bake the eggplant slices for 15 minutes, then flip and bake for another 15 minutes.
- Once the eggplant slices are done, start building your towers. Place a slice of eggplant on a baking sheet, then add a spoonful of marinara sauce, a sprinkle of both cheeses, and a sprinkle of basil. Repeat this process until you have built your tower.
- Bake the eggplant towers for 10-15 minutes, or until the cheese is melted and bubbly.
- Serve the Low Carb Eggplant Towers hot and enjoy!
