Low Carb Fish Taco with Zucchini Tortillas[edit | edit source]
Ingredients[edit | edit source]
- Fish fillets (2)
- Zucchini (2 large)
- Eggs (2)
- Garlic powder (1 tsp)
- Cumin (1 tsp)
- Paprika (1 tsp)
- Salt and Pepper to taste
- Avocado (1)
- Lime (1)
- Cilantro (a handful)
- Olive oil (2 tbsp)
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Grate the zucchinis and squeeze out as much liquid as possible.
- In a bowl, mix the grated zucchini, eggs, and a pinch of salt and pepper.
- On a baking sheet lined with parchment paper, spread the zucchini mixture into small circles.
- Bake for about 15 minutes, or until the edges are crispy.
- While the zucchini tortillas are baking, season the fish fillets with garlic powder, cumin, paprika, salt, and pepper.
- Heat the olive oil in a pan over medium heat. Cook the fish fillets for about 4 minutes on each side, or until they are cooked through.
- Mash the avocado and mix it with the juice of the lime and chopped cilantro.
- Once the zucchini tortillas are done, spread the avocado mixture on them, add the fish, and fold them into tacos.
