Low Carb Key Lime Cheesecakes are a delicious and refreshing dessert that is perfect for those following a keto diet. They are easy to make and packed with flavor, making them a great choice for a healthy dessert.
Ingredients[edit | edit source]
- 1 1/2 cups almond flour
- 1/4 cup butter, melted
- 1/4 cup erythritol
- 1/2 teaspoon vanilla extract
- 16 oz cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup key lime juice
- 1 tablespoon lime zest
- 2 eggs

- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the almond flour, melted butter, erythritol, and vanilla extract. Press this mixture into the bottom of a lined muffin tin to form the crust.
- In a large bowl, beat the cream cheese until smooth. Add the heavy cream, key lime juice, lime zest, and eggs. Beat until well combined.
- Pour the cream cheese mixture over the crust in the muffin tin.
- Bake for 20-25 minutes, or until the cheesecakes are set.
- Allow the cheesecakes to cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, refrigerate for at least 2 hours before serving.
