This is a delicious and keto-friendly recipe for a Low Carb Orange and Gingerbread Cheesecake. It's a perfect dessert for those who are on a keto diet and love a hint of citrus and spice in their sweet treats.

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the almond flour, melted butter, granulated sweetener, and gingerbread spice. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and granulated sweetener until smooth and creamy.
  4. Beat in the eggs, one at a time, ensuring each is incorporated before adding the next.
  5. Stir in the heavy cream, orange zest, orange juice, and vanilla extract until well combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 1 hour, or until the center is set and the top is lightly browned.
  8. Allow the cheesecake to cool in the oven with the door slightly ajar.
  9. Once cooled, refrigerate for at least 4 hours, or overnight, before serving.
