The Low Carb Vegan Buddha Bowl is a delicious and healthy meal that is perfect for those following a keto diet. This recipe is packed with nutritious vegetables and a tasty tahini dressing, making it a satisfying and flavorful dish.

- 1 cup of cauliflower rice
- 1/2 cup of cherry tomatoes
- 1/2 cup of cucumber, diced
- 1/2 cup of avocado, sliced
- 1/2 cup of red cabbage, shredded
- 1/2 cup of bell peppers, sliced
- 2 tablespoons of tahini
- 1 tablespoon of lemon juice
- Salt and pepper to taste

- Start by preparing the cauliflower rice according to the package instructions.
- While the cauliflower rice is cooking, chop the cherry tomatoes, cucumber, avocado, red cabbage, and bell peppers.
- Arrange the cooked cauliflower rice and the chopped vegetables in a bowl.
- In a small bowl, mix the tahini and lemon juice together to make the dressing. Add salt and pepper to taste.
