Maple Pecan Keto Muffins are a delicious and healthy treat for those following a keto diet. They are low in carbs, high in healthy fats, and packed with nutrients.
Ingredients[edit | edit source]
- 2 cups of almond flour
- 1/2 cup of erythritol
- 1/2 cup of butter, melted
- 4 large eggs
- 1/2 cup of heavy cream
- 1 tsp of baking powder
- 1/2 tsp of salt
- 1 tsp of vanilla extract
- 1/2 cup of pecans, chopped
- 1/4 cup of sugar-free maple syrup
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the melted butter, eggs, heavy cream, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the chopped pecans.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Drizzle each muffin with sugar-free maple syrup before serving.
