Paleo stuffing
Paleo stuffing is a low carbohydrate / keto friendly food item.

Paleo Stuffing is a grain-free adaptation of the traditional side dish, made to be compliant with the Paleo diet. It utilizes almond bread or another grain-free bread as its base, providing a familiar texture and taste without the grains.
Ingredients[edit | edit source]
- 4 cups of grain-free bread, cubed (like almond bread or coconut bread)
- 1 cup celery, finely chopped
- 1 large onion, diced
- 2 garlic cloves, minced
- 1/4 cup of ghee or clarified butter
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp sage
- 1/2 cup chicken or vegetable broth
- Salt and pepper to taste
- Optional: 1/2 cup dried cranberries or chopped nuts for added texture and flavor
Preparation[edit | edit source]
- Preheat the oven to 350°F (175°C).
- In a large skillet, melt the ghee over medium heat. Add the diced onion and celery, sautéing until translucent.
- Add the garlic, rosemary, thyme, and sage to the skillet and stir for a minute until fragrant.
- In a large mixing bowl, combine the cubed bread with the skillet mixture. Toss to combine.
- Slowly pour the broth over the bread mixture, ensuring that the bread absorbs the liquid but doesn't become too soggy.
- Season with salt and pepper, and mix in optional ingredients if desired.
- Transfer the stuffing mixture to a baking dish and spread out evenly.
- Cover with foil and bake for 25-30 minutes. For a crispier top, uncover and bake for an additional 10-15 minutes.

- Serve alongside roasted meats like turkey or chicken.
- Pairs well with Cranberry Sauce and Gravy.
