This is a delicious and healthy keto friendly recipe for Pan Seared Steak with Yellow Cauliflower Rice. It's a perfect meal for those who are on a low-carb diet or just want to enjoy a tasty and nutritious dish.
Ingredients[edit | edit source]
- 2 (6-ounce) rib-eye steak
- 1 head of cauliflower
- 1 yellow bell pepper, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions[edit | edit source]
- Season the steaks with salt and pepper on both sides.
- Heat 1 tablespoon of olive oil in a pan over medium-high heat.
- Add the steaks to the pan and sear for about 4-5 minutes on each side for medium-rare. Adjust the cooking time based on your preferred level of doneness.
- Remove the steaks from the pan and let them rest.
- While the steaks are resting, prepare the cauliflower rice. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Heat the remaining tablespoon of olive oil in the same pan.
- Add the onion, bell pepper, and garlic to the pan and sauté until they are soft.
- Add the cauliflower rice, turmeric, salt, and pepper to the pan. Stir well to combine and cook for about 5-7 minutes, until the cauliflower is tender.
- Serve the steaks with the yellow cauliflower rice on the side.
