Parma Cauli Tabbouleh Plate with Feta[edit | edit source]
A delicious and healthy keto friendly recipe, the Parma Cauli Tabbouleh Plate with Feta is a perfect meal for those following a low-carb diet.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 cup Parmesan cheese, grated
- 1 cup parsley, chopped
- 1/2 cup mint, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 200°C (180°C fan) mark 6.
- Toss the cauliflower florets in the olive oil and spread out on a baking tray. Sprinkle with the Parmesan cheese and season with salt and pepper.
- Roast the cauliflower in the oven for 20-25 minutes, or until golden and crispy.
- While the cauliflower is roasting, prepare the tabbouleh. In a large bowl, combine the parsley, mint, cherry tomatoes, cucumber, and red onion.
- Once the cauliflower is done, let it cool slightly before adding it to the tabbouleh mixture. Toss well to combine.
- Top the tabbouleh with the crumbled feta cheese before serving.
