Perfectly Crisp Baked Chicken Wings[edit | edit source]

  1. Preheat your oven to 250 degrees F (120 degrees C) and place a rack in the lower third of the oven.
  2. Dry the chicken wings thoroughly with paper towels, then place in a large bowl.
  3. In a small bowl, combine the baking powder, salt, and black pepper.
  4. Sprinkle the baking powder mixture over the wings and toss until evenly coated.
  5. Arrange the wings on a baking sheet lined with aluminum foil, and place in the preheated oven.
  6. Bake for 30 minutes at 250 degrees F (120 degrees C).
  7. After 30 minutes, raise the oven temperature to 425 degrees F (220 degrees C) and bake for an additional 45 minutes, or until the wings are golden brown and crispy.
  8. While the wings are baking, combine the hot sauce and melted butter in a large bowl.
  9. Once the wings are done, remove from the oven and let cool for a few minutes.
  10. Toss the wings in the hot sauce mixture until evenly coated.
  11. Serve the wings with celery sticks and blue cheese dressing on the side.
