Ingredients[edit | edit source]

  • 2 boneless, skinless chicken breasts
  • 1/2 cup peri peri sauce
  • 2 cups cauliflower rice, cooked
  • 1/2 cup bell peppers, sliced
  • 1/2 cup red onions, sliced
  • 1/2 avocado, sliced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional garnish: fresh cilantro, lemon wedges

Preparation[edit | edit source]

  1. Marinate the chicken breasts in the peri peri sauce for at least 1 hour, or overnight for best results.
  2. Preheat a grill or grill pan over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and slightly charred.
  3. In a skillet, heat olive oil over medium heat. Sauté the bell peppers and red onions until they are slightly softened.
  4. To assemble the bowl, start with a base of cauliflower rice. Place the grilled chicken on top, followed by the sautéed vegetables.
  5. Add slices of avocado on the side.
  6. Drizzle extra peri peri sauce over the bowl if desired, and garnish with cilantro and lemon wedges.
