Peri Peri Bowl Recipe[edit | edit source]
Ingredients[edit | edit source]
- 2 boneless, skinless chicken breasts
- 1/2 cup peri peri sauce
- 2 cups cauliflower rice, cooked
- 1/2 cup bell peppers, sliced
- 1/2 cup red onions, sliced
- 1/2 avocado, sliced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional garnish: fresh cilantro, lemon wedges
Preparation[edit | edit source]
- Marinate the chicken breasts in the peri peri sauce for at least 1 hour, or overnight for best results.
- Preheat a grill or grill pan over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and slightly charred.
- In a skillet, heat olive oil over medium heat. Sauté the bell peppers and red onions until they are slightly softened.
- To assemble the bowl, start with a base of cauliflower rice. Place the grilled chicken on top, followed by the sautéed vegetables.
- Add slices of avocado on the side.
- Drizzle extra peri peri sauce over the bowl if desired, and garnish with cilantro and lemon wedges.

- Pair with a refreshing keto lemonade or a keto chai latte.
- For a milder version, use less peri peri sauce or mix with a bit of sour cream.
