Poha
Beaten/flattened rice

Ingredients:
- 1 cup poha (flattened rice)
- 1/4 cup peanuts
- 1/4 cup chopped onion
- 1/4 cup chopped tomatoes
- 1/4 cup chopped green chilies
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp ghee
Instructions:
- Soak the poha in water for 10 minutes, then drain and set aside.
- Heat ghee in a pan over medium heat.
- Add mustard seeds, cumin seeds and let them splutter.
- Add peanuts and fry until golden brown.
- Add onion, tomatoes and green chilies. Fry for 2-3 minutes.
- Add turmeric powder, salt and sauté for a minute.
- Add the soaked poha and mix well.
- Cover and cook for 2-3 minutes.
- Serve hot.
