Simple Keto Breakfast with Fried Eggs[edit | edit source]

Ingredients[edit | edit source]
- 2 large eggs
- 1 tablespoon coconut oil
- 1/2 avocado, sliced
- 1/2 cup spinach
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the coconut oil in a non-stick frying pan over medium heat.
- Crack the eggs into the pan and cook for 2-3 minutes for runny yolks, or longer if you prefer your yolks more set.
- While the eggs are cooking, slice the avocado and wash the spinach.
- Once the eggs are cooked to your liking, remove from heat and season with salt and pepper.
- Serve the eggs with the sliced avocado and spinach on the side.
