Skillet Chicken Pot Pie is a delicious and hearty meal that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavor, making it a great option for a weeknight dinner.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, melt the butter over medium heat. Add the chicken and cook until browned. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
  4. Stir in the almond flour and cook for another minute.
  5. Slowly add the chicken broth and heavy cream, stirring constantly. Bring the mixture to a simmer.
  6. Return the chicken to the skillet and add the cauliflower. Season with salt and pepper.
  7. Sprinkle the shredded cheese on top of the mixture.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped parsley before serving.
