Skillet Chicken Pot Pie is a delicious and hearty meal that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavor, making it a great option for a weeknight dinner.
Ingredients[edit | edit source]
- 1 lb chicken breast, cubed
- 1 cup cauliflower, chopped
- 1/2 cup carrots, chopped
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup almond flour
- 2 tbsp butter
- Salt and pepper to taste
- 1/2 cup cheddar cheese, shredded
- 1/4 cup parsley, chopped
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large skillet, melt the butter over medium heat. Add the chicken and cook until browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
- Stir in the almond flour and cook for another minute.
- Slowly add the chicken broth and heavy cream, stirring constantly. Bring the mixture to a simmer.
- Return the chicken to the skillet and add the cauliflower. Season with salt and pepper.
- Sprinkle the shredded cheese on top of the mixture.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
