Slow Cooker Moroccan Beef is a delicious and hearty meal that is perfect for those following a keto diet. This recipe is packed with flavors from the spices and herbs used, and the slow cooking process makes the beef incredibly tender.
Ingredients[edit | edit source]
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 1 cup beef broth
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large skillet over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the skillet and set aside.
- In the same skillet, add the onion and garlic and cook until softened. Add the cumin, coriander, turmeric, cinnamon, ginger, and cayenne pepper and cook for another minute.
- Transfer the onion and spice mixture to a slow cooker. Add the beef, beef broth, bay leaf, salt, and pepper. Cover and cook on low for 6-8 hours, or until the beef is tender.
- Discard the bay leaf and garnish with fresh parsley before serving.
