A delightful keto friendly recipe that combines the rich flavors of speculoos and macadamia nuts to create a delicious biscotti.

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, erythritol, speculoos spice mix, baking powder, and xanthan gum.
  3. In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Fold in the chopped macadamia nuts.
  6. Shape the dough into a log on the prepared baking sheet.
  7. Bake for 25 minutes, or until the log is lightly golden.
  8. Remove from the oven and let cool for 15 minutes.
  9. Using a sharp knife, cut the log into slices.
  10. Return the slices to the baking sheet and bake for an additional 15 minutes, or until the biscotti are crisp.
  11. Allow the biscotti to cool completely before serving.
