A delightful keto friendly recipe that combines the rich flavors of speculoos and macadamia nuts to create a delicious biscotti.
Ingredients[edit | edit source]
- 2 cups of almond flour
- 1/2 cup of erythritol
- 1/2 cup of macadamia nuts, chopped
- 1/4 cup of butter, melted
- 1/4 cup of speculoos spice mix
- 1 teaspoon of baking powder
- 1/2 teaspoon of xanthan gum
- 2 large eggs
- 1 teaspoon of vanilla extract
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, erythritol, speculoos spice mix, baking powder, and xanthan gum.
- In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the chopped macadamia nuts.
- Shape the dough into a log on the prepared baking sheet.
- Bake for 25 minutes, or until the log is lightly golden.
- Remove from the oven and let cool for 15 minutes.
- Using a sharp knife, cut the log into slices.
- Return the slices to the baking sheet and bake for an additional 15 minutes, or until the biscotti are crisp.
- Allow the biscotti to cool completely before serving.
